Steven Tolzmann, a senior at St. Johns Technical High School, recently accepted a paid position with the St. Francis Bed & Breakfast after completing a six week summer internship. With the support of the owners and the staff at the St. Francis B&B and Casa de Suenos B&B, Tolzmann learned “how important it is to find out what guests would like and how to provide it to them.” Tolzmann gained experience making cakes for weddings, anniversaries, and birthdays. He learned how to make and can apple butter, and how to make gourmet dessert recipes with the chef who mentored Tolzmann in the kitchen. Steven also shared,”I learned skills in Housekeeping, Guest Services, Food Preparation, and Food Service. An intern at a small bed and breakfast gets to perform many tasks and it is never boring. I did everything from making desserts, preparing breakfasts and specialty coffees, cleaning rooms, set up and breakdown before and after morning breakfast. My favorite task was making desserts.”
Tolzmann’s goals are to finish the Culinary Arts program at First Coast Technical College and then transfer to Daytona State College to earn an Associate of Science Degree in Culinary Arts. Because of this internship experience, Steven discovered that the culinary field is the direction he wants to take his career and perhaps even stay in the Bed & Breakfast industry. “The owners and supervisors, gave me the opportunity to learn and to be a part of their Bed & Breakfast team and I appreciated this chance.”
